I'm using gnome-shell as my main desktop too, I really like it.
Our latest BL dev ISO (deuterium, not yet out for testing) is damn sweet, though. I'm about to install that on my 64 bit partition, currently running Hydrogen. We've solved pulseaudio, we think, and our autostart is faster, smoother, better. We have a really light, complete, integrated desktop. See the threads in Dev & Suggestions.

I'm updating the OP install set to omit gnome-shell-extensions, since apps-menu was reported as problematic. You can install extensions from extensions.gnome.org or github.com.
And I'll upload my shell theme, I was kidding about that.

Or, to use a different font, change the font name in the shell theme's gnome-shell.css file, line #26.
@cloverskull, locally installed extensions override global ones, so you should be all set.

I've updated Post #2 with a panel keyboard navigation tip, and my Shell theme has new overlay/modal dialog/panel popup styling. The dropbox link should be good, let me know if it isn't.

12-Hour Clock for the Login screen (gdm3)
I have been searching for this tip for months, off and on. I can't find any GNOME documentation. However...
sudo su
cat >> /usr/share/glib-2.0/schemas/org.gnome.desktop.interface.gschema.override << EOF
[org.gnome.desktop.interface]
clock-format='12h'
EOF
glib-compile-schemas /usr/share/glib-2.0/schemas
This creates an override file for that one preference. If gdm3 upgrades, that preference shouldn't get reset this way.
