Disabling All Internet Connections

I was wondering if it's safe to permanently disable wifi from my laptop (along with any other possible internet connection). It's just an eee pc that I will use solely for writing important documents that I don't want stolen, in any way. No internet connections whatsoever, for extra security.

I'll be running Bunsenlabs on the laptop. I will install it once, then disable internet connections. Would the laptop be good-to-go until I install the next version of Bunsenlabs, or will the lack of internet access somehow screw up the coding (or whatever) after a while? Will anything screw up after a long period of no updates? I'll only be using Geany for creating documents, and that's it.
Would it even be possible to just install Bunsenlabs once, and then never again? Without even reinstalling the updated versions of Bunsenlabs, ever? Would the computer screw up after years of no updates; yet with no internet connection, and I will be only using one writing program?
