I was wanted to dig around a bit in the skel directory and when I've gone looking it's not there. Has it been moved or simply deleted?
I noticed it's still available in the github repo

Nope, it's here
mothra@mothra:~$ whereis skel
skel: /etc/skel
and for bunsen specific:
mothra@mothra:/usr/share/bunsen/skel$ ls
bin Documents Downloads Music Pictures Public Templates tmp Videos
mothra@mothra:/usr/share/bunsen/skel$

Okay I didn't think of trying whereis. I did try
ls -AgR | grep skel
but that didn't return anything. I tried it on the bunsen dir in .config and it worked so I figured I had the syntax right. Thanks Horizon_Brave

So my skel dir located at /etc/skel is different to yours @Horizon_Brave

Could the fact I've installed mine into Virtual box have anything to do with it?

Shouldn't be a problem with a VM. You should have the basic /etc/skel with contents you have listed plus the user configs stored in /usr/share/bunsen/skel.
There was a recent thread about the reasons for this structure...I'll have a look. BL has been trying to keep as close as possible to Debian recommendations (which not all distros do it seems!), and keep /etc/skel minimal.

Okay my mistake when I navigate to the bunsen specific skel I see the output I was looking for. Obviously I didn't pay close enough attention to the earlier post.
