There are three things that aren't clear to me after goofing around with the live session:
1) Are there any downsides (would anything break during updates) to changing the sources to testing after I install Bunsenlabs on my system?
2) If I install the full Libreoffice suite ( or any other software) after installation through Synaptic, would it appear in the Openbox menus?
3) At that point (after 1 & 2 above), wouldn't I essentially just have a Debian Testing minimal OS with Openbox?
Any answers that may be provided will be greatly appreciated.

PS - I forgot to ask if the media codecs could be installed just as I would in Debian... Sorry.

Please take a moment to read this illuminating post by @mor, a long time Debian user and a member of forums.debian.net

tl;dr: Yes, stuff will break if you use testing/unstable -- it's supposed to, that's the whole point of a development release.

No.
You can add it yourself very easily though (or add a standard auto-updating Debian menu to the openbox menu)

If you install the LIbreOffice components from the menu (Menu -> Office -> Install -> options), then they will appear in the menu afterwards because it is done via a pipemenu script. Same if you choose the LO option in the bl-welcome script. But not if you install from Synaptic. Wrong! The pipemenu picks up any LO component and populates the menu :8
