You know how on the desktop there is a little display thing showing some system information as well as these hotkeys? How do I edit them to make the hotkeys my own and to link to other app alternatives or make new hotkeys to apps I use a lot?
Also, there is like some "defaults" in the main menu thing... like "web browser" that is different to applications/internet/browserName... how do I edit that to link to my personal preference of a browser?

these point to aliases like x-www-browser or bl-file-manager which are managed by the Debian alternatives system. Don't change the menu, but change what app the alias points to. That way all the references in scripts, submenus etc will continue to work with your new app.
menu > System > Edit Debian Alternatives
and
menu > System > About Bunsen Alternatives

That on the desktop is as conky used as a static display, easy enough to edit it, it will be a hidden file in your /home folder.
Changing it will not change the key bindings though.
