I have a MacBook Air from around 2013 with Debian Bullseye (Gnome) installed and wake from sleep sometimes works instantaneously but usually takes about 30 seconds. Howdy, Would check the 'Display' tab in xfce4-power-manager and see if your times match any of the settings. In other words, disable "switch off after" and see if it continues to cause issues. Maybe you will get lucky:)

Thanks. I think I've pinned it down. Needed to add `noacpi` kernel parameter and it all seems to be working beautifully now.
