i'm pretty sure nmtui uses dialog.
dialog can be customized - somewhat.
first, tell it to spit out the config:

dialog --create-rc $HOME/.dialogrc

then, edit the file to your liking.

OP if you don't want to use nm-applet, or nmtui, why not just use the nmcli to script up whatever you wish to do?  That what whatever console you're using allows for easier text, color modification?
